They display the sunlit portion of the Moon as observed from the Earth at any point during the Lunar month. This is the time it takes for a full Lunar orbit and lasts a total of 29.5 Earth days. In other words, the rotation from a New Moon, when it's not visible, to a Full Moon and back again.
